This Thai street-style recipe transforms simple pork mince into a bold and aromatic dish. Garlic and red chillies are stir-fried at high heat to release their fragrance, then pork mince is added and cooked until golden. Soy and oyster sauces bring depth and savoury notes, while fresh basil leaves finish the dish with a burst of freshness. Served hot with steamed rice, itโ€™s a fast, flavour-packed meal inspired by Thai street food.

Ingredients

  • 500 g pork mince
  • 4 cloves garlic, minced
  • 2 red chillies, chopped
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 cup basil leaves
  • 2 tbsp oil

Method

  1. Heat oil in a wok over high heat until shimmering.
  2. Add garlic and chilli, stir-fry for 30โ€“40 seconds until fragrant.
  3. Add pork mince, breaking it up with a spatula, and cook until browned.
  4. Stir in soy sauce and oyster sauce, mixing well until the mince is glossy and coated.
  5. Toss in basil leaves, stir briefly until wilted.
  6. Serve immediately with steamed rice.
