Sourced from naturally pasture-raised New Zealand lamb, this meticulously prepared rack of lamb offers unparalleled tenderness and a delicate, mild flavor profile. The "cap off" preparation means the heavy layer of fat over the eye of the meat is completely removed, ensuring a much leaner cut while still retaining incredible juiciness. The bones are expertly "Frenched" (scraped clean of meat and fat near the top) for an elevated presentation. Ideal for gourmet grilling, pan-searing, or roasting with a Dijon herb crust, it arrives ready to be sliced into single or double "lollipop" chops.
