Ingredients
- 1 sheet shortcrust pastry
- 250 g smoked breakfast ham, diced
- 150 g Gruyère, grated
- 4 eggs
- 300 ml cream
- 100 ml milk
- 1 tsp Dijon mustard
- 1 tsp thyme leaves
- Black pepper
Method
- Line a tart tin with pastry, chill, then blind-bake at 190°C.
- Scatter ham and most of the Gruyère over the pastry case.
- Whisk eggs, cream, milk, mustard, thyme and pepper.
- Pour into the case and top with remaining cheese.
- Bake at 175°C until just set with a slight wobble, then rest before slicing.
Storage guidance
- Keep frozen at or below -18°C.
- Once thawed, keep refrigerated and consume promptly.
- Do not refreeze after complete thawing.
- Cook thoroughly before serving where applicable.
