Ingredients
- 1 whole turkey, thawed
- 150 g softened butter
- 4 garlic cloves, minced
- 2 tbsp chopped sage
- 2 tbsp chopped thyme
- 1 lemon, halved
- 1 onion, quartered
- 500 ml chicken stock
- Salt and black pepper
Method
- Pat the turkey very dry and bring it toward room temperature.
- Mix butter, garlic and herbs; spread under and over the skin.
- Fill the cavity with lemon and onion, then season generously.
- Roast at 180ยฐC, basting occasionally, until the thickest thigh reaches 74ยฐC.
- Rest loosely covered for at least 30 minutes before carving.
Storage guidance
- Keep frozen at or below -18ยฐC.
- Once thawed, keep refrigerated and consume promptly.
- Do not refreeze after complete thawing.
- Cook thoroughly before serving where applicable.
